Modern Mojito

A contemporary take on the classic Cuban cocktail, featuring molecular mixology techniques for an enhanced sensory experience.

Ingredients:

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • 6-8 fresh mint leaves
  • Soda water to top
  • 1 tsp sodium alginate
  • 1 tsp calcium chloride
  • 1 cup water

Instructions:

  1. Prepare the spherification bath by dissolving 1 tsp of calcium chloride in 1 cup of water.
  2. In a separate container, mix the simple syrup with 1 tsp of sodium alginate until fully dissolved.
  3. Using a dropper, drop the sodium alginate mixture into the calcium chloride bath to create small spheres. Let them sit for about 3 minutes, then rinse with water.
  4. In a shaker, muddle the mint leaves with the lime juice.
  5. Add the rum and ice, then shake well.
  6. Strain into a glass filled with ice, top with soda water, and gently place the spheres on top.
  7. Garnish with a sprig of mint and serve.
