Ingredients:
2 oz white rum
1 oz fresh lime juice
1 oz simple syrup
6-8 fresh mint leaves
Soda water to top
1 tsp sodium alginate
1 tsp calcium chloride
1 cup water
Instructions:
Prepare the spherification bath by dissolving 1 tsp of calcium chloride in 1 cup of water.
In a separate container, mix the simple syrup with 1 tsp of sodium alginate until fully dissolved.
Using a dropper, drop the sodium alginate mixture into the calcium chloride bath to create small spheres. Let them sit for about 3 minutes, then rinse with water.
In a shaker, muddle the mint leaves with the lime juice.
Add the rum and ice, then shake well.
Strain into a glass filled with ice, top with soda water, and gently place the spheres on top.
