A fruity and refreshing sangria with figs and grapes, featuring bursts of flavor from spherification.
Ingredients:
1 bottle of red wine
1/2 cup brandy
1/4 cup orange liqueur
1/4 cup sugar
1 orange, sliced
1 lemon, sliced
1 cup grapes, halved
4 figs, quartered
2 cups soda water
For the spherification: 1 cup grape juice, 1.5 grams sodium alginate, 5 grams calcium chloride, 500 ml water
Instructions:
In a large pitcher, combine the red wine, brandy, orange liqueur, sugar, orange slices, lemon slices, grapes, and figs. Stir well and refrigerate for at least 2 hours.
To make the grape juice spheres, dissolve the sodium alginate in the grape juice using a blender. Let it rest for 30 minutes to remove air bubbles.
Dissolve the calcium chloride in the water. Using a dropper, drop the grape juice mixture into the calcium chloride bath to form spheres. Let them sit for 3 minutes, then rinse with water.
When ready to serve, add the soda water to the sangria and stir. Pour into glasses and add a few grape juice spheres to each glass.
